I had a girly day this past Sunday with two friends. I was out of town visiting friends and family for the weekend. It was a great time as always. Over lunch, my girlfriend mentioned how she likes to read blogs to get new recipe ideas but more importantly she enjoys reading a story behind each recipe. I thought this was interesting and a wonderful blogging tip for me. There is no time like the present to begin posting favorite food choices on occasion since I am a food connoisseur at heart.
This past Sunday evening my parents and I decided to BBQ. I’m attempting to grasp every last bit of summer. It ain’t over ’til it’s over folks. I always assist in the meal preparation when visiting my family. To begin, I poured myself a Key West Ale, one of my Dad’s fancy beers. For my Dad’s birthday I purchased him a Beer of the Month membership. I don’t believe I ever mentioned this yet on my blog, but I like a beer. This particular brew was a crisp amber ale, straight from the home of the Conch Republic.
I also snacked on some olives.
Dinner was fish and veggie kabobs with a summer vegetable medley over grain rice.
The kabobs consisted of:
- Fresh tilapia (white fish)
- Green frying peppers
- Sliced peaches
- White onion
- Tomatoes
Marinade which was outstanding and made this entire dish:
- 1/2 cup dry white wine
- 2 tablespoons lime juice
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon dried thyme
- 1/4 teaspoon pepper
Summer Veggie Medley:
- Ears of corn
- Small red potatoes
- Mushrooms
- Baby Carrots
- Green frying peppers
Seasoning:
- 1/2 cup melted butter
- 1 teaspoon minced parsley and basil
- 3/4 teaspoon salt
- 1/4 teaspoon pepper
